Ingredients
  • 125g dark chocolate, chopped
  • 175g unsalted butter, softened
  • 175g light soft brown sugar
  • 75g caster sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 200g plain flour, sifted
  • 40g cocoa powder
  • 1 tsp bicarbonate of soda
  • ½ tsp baking powder
  • 125g M&M’S® Choco Eggs, roughly chopped
  • 100g M&M’S® Minis
Instructions :

Makes: 22 cookies

  1. Line two large baking trays with baking paper.
  2. Melt the chocolate in a heatproof bowl over a pan of barely simmering water, then remove from the heat and leave to cool slightly.
  3. In another bowl, beat the butter with both sugars until combined and smooth. Gradually beat in the eggs, then mix in the vanilla extract and melted chocolate. Add the flour, cocoa powder, bicarbonate of soda, baking powder and a generous pinch of salt and mix again until thoroughly combined, then fold in the M&M’S® Choco Eggs and M&M’S® Minis.
  4. Using two dessert spoons or an ice cream scoop, spoon the mixture into 22 evenly sized mounds. Cover and chill for 30 mins until firm, then roll into balls with your hands and chill for another hour.
  5. Meanwhile, heat the oven to 170C/150C fan/gas 3. Bake the cookies for 12-15 minutes, then leave to cool on the tray for 5 mins before transferring to a wire rack to cool completely.
