Ingredients
  • 200g baking margarine, softened
  • 200g caster sugar
  • 4 eggs
  • 30ml milk
  • 200g self-raising flour
  • 2 tsp vanilla extract
  • 150g icing sugar, sifted
  • 75g unsalted butter, softened
  • 2 M&M’S® Bunnies, roughly chopped

Total Time: 1 hour, 15 minutes
Makes: 20 pieces

  1. Heat the oven to 180C/160C fan/gas 4. Grease and line a 26 x 22cm baking tin with baking paper.
  2. Using an electric whisk, beat together the margarine and sugar until light and fluffy. Gradually whisk in the eggs, milk and 1 tsp vanilla extract until combined, then stir in the self-raising flour.
  3. Pour the mixture into the prepared tin and bake in the oven for 25-35 mins until golden in colour. Remove from the oven and allow to cool completely in the tin.
  4. To make the icing, beat together the icing sugar, butter and the remaining vanilla extract until smooth. You may need to add a splash of hot water to loosen.
  5. Remove the cake from the tin, then spread over the buttercream icing, top with the M&M’S® Bunnies and serve.
