INGREDIENTS

36 vanilla sandwich cookies with cream filling

8oz plain cream cheese

1 tbsp lemon juice

1 cup M&M’S Caramel, divided

1lb yellow chocolate candy melts

1 tube decorative black icing or gel

Red heart sprinkles (optional)

Candy eyes (optional)

Equipment:

246-inch lollipop sticks

Styrofoam block

DIRECTIONS

1. Line baking sheet with parchment paper; set aside. In a food processor, blend cookies, cream cheese and lemon juice. Reserve 2 tbsp M&M’S; set aside. Chop remaining M&M’S and fold into cheesecake.

2. Using small ice cream or cookie scoop, scoop mixture into 11/2 -inch balls; place on prepared baking sheet. Using slightly wet hands, roll balls until smooth. Freeze balls for about 2 hours or until firm.

3. Meanwhile, in microwavable bowl, microwave candy melts until melted, stirring occasionally until smooth. (Alternatively, melt candy melts in double boiler.) Transfer to narrow, deep cup or bowl; dip in tips of lollipop sticks. Press balls onto sticks; stand in Styrofoam block for about 5 minutes or until set.

4. Working quickly, dip pops into melted candy melts and gently shake off excess. Stand pops in Styrofoam block for 5 to 10 minutes or until just set. While coating is still slightly soft, decorate pops with reserved M&M’S, black icing, heart sprinkles and candy eyes (if using) to resemble your favorite emoji. Freeze for about 15 minutes or until fully set.

Tip: Prepared cheesecake can found in the frozen dessert section of most major supermarkets. You can always make your own, but use a baked cheesecake recipe, as no-bake cheesecakes tend to be too soft in consistency.
