Mini M&M Fudge Mousse Bites

Recipe Ingredients:
- 3/4 cup chocolate wafer crumbs
- 2 tbsp butter, melted
- 4 oz cream cheese, at room temperature
- 2 tbsp icing sugar
- 1 tsp vanilla extract
- 3 oz white chocolate, melted and cooled
- 1/2 cup 35% heavy cream
- 2 pkg (1.41 oz each) Fudge Brownie M&M’s, divided
Directions:
Prep Time: 15 minutes
Total Time: 15 minutes (+ 1 hour 15 minutes standing time)
- Spray 24 mini silicone muffin cups with cooking spray. Toss together wafer crumbs and melted butter until combined; divide evenly into muffin cups, pressing into bottom to form crusts. Freeze for 15 to 20 minutes or until firm.
- Using electric mixer, beat cream cheese, icing sugar and vanilla until light and fluffy. Beat in white chocolate until blended.
- In separate bowl, beat cream until stiff peaks start to form. Fold into white chocolate mixture. Coarsely chop 1 pkg of Fudge Brownie M&M’s; fold into cream cheese mixture.
- Spoon evenly over cookie crusts into muffin cups. Refrigerate for at least 1 to 2 hours or until mousse is firm and set. Top with remaining Fudge Brownie M&M'S.
Tip:
- Substitute graham cracker crumbs or vanilla wafer crumbs for chocolate wafer crumbs if desired.
