M&M’S Lofthouse Cookies
Lofthouse cookies are soft, cakey, and irresistible with colorful icing. This M&M’S version is even better than the grocery store variety.

Recipe Ingredients:
Cookies:
- 1/2 cup + 2 tbsp all-purpose flour
- 1 tbsp cornstarch
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- Pinch salt
- 2 tbsp + 2 tsp granulated sugar
- 2 tbsp unsalted butter, softened
- 1 egg
- 1 tbsp sour cream
- 1/4 tsp almond extract
- 1/4 tsp vanilla extract
- 2 tbsp + 2 tsp chopped M&M’S Crunchy Cookie
Frosting:
- 3/4 cups store-bought vanilla frosting
- 1 to 2 drops each primary blue, red, yellow and green food coloring
- 2 tbsp white fondant
- 2-inch round cookie cutter
- 1-inch lowercase letter “m” cookie cutter

Cook Time: 20 minutes
Total Time: 1 hour 5 minutes (+ 1 hour 30 minutes standing time)
- Cookies: In medium bowl, whisk together flour, cornstarch, baking powder, baking soda and salt; set aside.
- In another medium bowl, using electric mixer, beat together sugar and butter until light and fluffy. Beat in egg, sour cream, almond extract and vanilla until combined.
- Beat butter mixture on low speed into flour mixture until just combined. Stir in chopped M&M’S. Transfer batter in a ball to a piece of plastic wrap and wrap to seal. Flatten ball into a disk shape and refrigerate for 1 hour or until well chilled.
- Preheat oven to 350ºF. Lightly dust work surface with flour. Roll dough out to 1/4-inch thickness. Using 2-inch round cookie cutter, cut out 12 cookies, rerolling scraps as needed. Arrange on parchment paper–lined baking sheets.
- In batches, bake for 8 to 10 minutes or until edges are set and tops are almost set. Let cool completely on baking sheets on wire rack.
- Frosting: Divide frosting equally among four bowls. Tint each bowl with one kind of food coloring to resemble blue, red, yellow and green M&M'S. Spread frosting on cookies, one color per cookie; set aside.
- Roll fondant out on a lightly floured work surface to 1/8-inch thickness. Using “m” cookie cutter, cut out 12 “m’s.” Place 1 “m” on top of each cookie.
Tip:
- Alternatively, use a small tube of store-bought white icing to finish the “m” on each cookie.
- Finish cookie with sprinkles, if desired.
