These mini cupcakes with pumpkin pie spices are a fun way to celebrate the first day of fall.

INGREDIENTS

1 box (15.25 oz) white cake mix

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp each ground nutmeg and cloves

1/2 cup M&M'S White Chocolate Peanut, divided

1 oz white chocolate, melted

DIRECTIONS

1. Preheat oven to 350?F. Prepare cake mix according to package directions, adding cinnamon, ginger, nutmeg and cloves to cake mix.

2. Spoon 2 tbsp batter into each of 6 paper-lined mini muffin cups. Reserve remaining batter (about 3 1/4 cups) for another use. Add 1 M&M’S White Chocolate Peanut to center of each cupcake. Bake for 10 to 15 minutes or until tester inserted in center comes out clean. Let cool completely.

3. Drizzle white chocolate over cupcakes. Chop remaining white M&M’S; sprinkle over cupcakes.

Tips:

Tint the white chocolate with a little orange food coloring if desired.

Bake remaining cake batter according to package directions. If desired, cut into cubes and assemble into mini trifles with prepared butterscotch pudding and M&M’S for a quick treat.
